baking
Process of cooking by dry heat, especially in an oven. Baked products include bread, cookies, pies, and pastries. Ingredients used in baking include flour, water, leavening agents (baker's yeast, baking soda, baking powder), shortening (fats, butter, oils), eggs, milk, and sugars. These are mixed together to create dough or batter, which is then transferred to a metal pan or sheet and heated. Leavening agents produce gas that becomes trapped in the dough, causing it to rise. Shortening makes doughs more easily workable and the final product tenderer. Egg whites are used to produce a light, airy texture, and yolks contribute color, flavor, and texture. Milk is used for flavoring, and sugars to sweeten and to aid fermentation.
Saki
Scottish writer. A journalist early in his career, he wrote political satires and worked as a foreign correspondent before settling in London in 1908. His comic short stories and sketches, which satirize the Edwardian social scene, were published in Reginald (1904), Reginald in Russia (1910), The Chronicles of Clovis (1911), and Beasts and Super-Beasts (1914); the best-known include "Tobermory" and "The Open Window." Studded with epigrams and with well-contrived plots, his stories reveal a vein of cruelty and a self-identification with the enfant terrible. He was killed in action in World War I.
Zaria
Historic kingdom and traditional emirate, N Nigeria. It was founded in the 11th cent. and was the southernmost of the original seven Hausa Bakwai states. Islam was introduced c.1456, and there were Muslim Hausa rulers in the early 16th cent. A Songhai warrior conquered Zazzau c.1512. By the end of the century it was renamed Zaria and was in decline. It became a tributary state (c.1734-1804) of the Bornu kingdom. In 1804 it came under the Fulani Muslims. The Zaria emirate was created in 1835. It remains one of Nigeria's largest traditional emirates, and it is one of the nation's leading producers of cotton for export.
Ake
Nigerian political scientist and activist. He received his PhD from Columbia Univ. in 1966. He founded the Center for Advanced Social Science in Port Harcourt, Nigeria, and was active in efforts to uncover environmental and human-rights abuses by the Nigerian government. His books on African development and politics made him one of Africa's leading political scientists. He served as a consultant to Royal Dutch/Shell Group, but angrily resigned in 1995 to protest the execution of the activist K. Saro-Wiwa. He died the next year in a plane crash, whose cause has been disputed.
