flour
Finely ground meal of cereal grain, usually wheat, used as a basic ingredient of baked goods (see baking). In the production of refined flour, milling is used to separate the starchy endosperm from the other parts of the kernel. In the production of whole-wheat flour, all parts of the kernel are used. Following milling, the particles of endosperm (called semolina) are ground to flour and often bleached to imitate natural aging. Flour grades are based on the residual amount of branny particles. When flour is mixed with water to make dough, its protein content is converted to gluten, an elastic substance that forms a continuous network throughout the dough and is capable of retaining gas, thus causing the baked product to expand, or rise.


Blount
U.S. politician. Born in Bertie Co., N.C., he served in the Amer. Revolution before being elected to six terms in the legislature, and was a delegate to the Constitutional Convention. As the first governor of lands ceded to the U.S. by N. Carolina, he worked to secure statehood for what would become Tennessee. In 1796 he became one of Tennessee's first two senators, but he was expelled from the Senate in 1797 on charges of plotting to help the British gain control of Spanish Florida and Louisiana.

Any visible mass of water droplets, ice crystals, or a mixture of the two that is suspended in the air, usually at a considerable height. Clouds are usually created and sustained by upward-moving air currents. Meteorologists classify clouds primarily by their appearance. The 10 main cloud families are divided into three groups on the basis of altitude. High clouds, which are found at mean heights of 45,000-16,500 ft (13-5 km), are, from highest to lowest, cirrus, cirrocumulus, and cirrostratus. Middle clouds, at 23,000-6,500 ft (7-2 km), are altocumulus, altostratus, and nimbostratus. Low clouds, at 6,500-0 ft (2-0 km), are stratocumulus, stratus, cumulus, and cumulonimbus. A shallow layer of cloud at or near ground level is called fog.


Clouet
French painter. He was chief painter to Francis I and produced many pastel portraits of members of the French court. He was celebrated in his lifetime as the equal of Michelangelo, and his work is often compared with that of H. Holbein the Younger. His son Franç ois Clouet (c.1515-1572) took his place as official painter to Francis I in 1540. Franç ois directed a large workshop of miniaturists, enamelists, and decorators who produced portraits, genre paintings, and theatrical scenes. His own portraits are less memorable than his father's; some 50 of his portrait drawings survive.


Fleury
