baking
Process of cooking by dry heat, especially in an oven. Baked products include bread, cookies, pies, and pastries. Ingredients used in baking include flour, water, leavening agents (baker's yeast, baking soda, baking powder), shortening (fats, butter, oils), eggs, milk, and sugars. These are mixed together to create dough or batter, which is then transferred to a metal pan or sheet and heated. Leavening agents produce gas that becomes trapped in the dough, causing it to rise. Shortening makes doughs more easily workable and the final product tenderer. Egg whites are used to produce a light, airy texture, and yolks contribute color, flavor, and texture. Milk is used for flavoring, and sugars to sweeten and to aid fermentation.


aging
Gradual change in an organism that leads to increased risk of weakness, disease, and death. It takes place in a cell, an organ, or the total organism over the entire adult life span of any living thing. There is a decline in biological functions and in ability to adapt to metabolic stress. Changes in organs include the replacement of functional cardiovascular cells with fibrous tissue. Overall effects of aging include reduced immunity, loss of muscle strength, decline in memory and other aspects of cognition, and loss of color in the hair and elasticity in the skin. Aying
Chinese critic and historian of modern Chinese literature. A member of the Communist Party and of the standing committee of the League of Left-Wing Writers, he began c.1930 to gather and study materials on the literature of modern times and of the Ming and Qing dynasties. His published works, incl. Women Writers in Modern China (1933) and Two Talks on the Novel (1958), contributed greatly to the record of modern culture in China.


Balinese
People of the island of Bali, Indonesia. They differ from other Indonesians in adhering to the Hindu religion, though their culture has been heavily influenced by the Javanese. In Balinese villages each family lives in its own compound, surrounded by earthen or stone walls; all villages have temples and an assembly hall. Balinese religion fuses Hindu Saivism with Buddhism, ancestor cults, and belief in spirits and magic. Marriage is often limited to members of the same kinship organization, and family relationships are reckoned through the male line.
